Adventures in Snack Making

I can claim absolutely no originality for this post whatsoever. But it’s Sunday and I’m feeling fine with stealing other people’s genius today.

First stolen item: My fab friend discovered this amazing blog Sprouted Kitchen. Second stolen item: Sara of Sprouted Kitchen’s fancy Savory Roasted Almonds. Third stolen item: Inspiration from Sara’s bf’s beautiful photos of her food creations. (Although the photos below are mine.)

So aaaaanyway, forget about the stealing. Ahem… Sara’s site is all about cooking with natural ingredients, whole grains, unsaturated fats, etc. And she promises that on her blog “you will find recipes that ALWAYS use local ingredients, and organic when found affordable.” I was inspired. And hungry. So I made yummy almonds.

Here’s what you’ll need, but you can find the full recipe here.
3 Cups/16 oz. Raw Almonds
2 Small Egg Whites (OR 1 Extra Large Egg White)
1/3 Cup Fresh Thyme Leaves
1 Tbsp. Red Pepper Flakes
1 Tbsp. Dried Oregano
1 Tbsp. Garlic Powder
3 Tbsp. Lemon Zest
2 tsp. Black Pepper
1 1/2 Tbsp. Natural Cane Sugar/Sucanat
Sea Salt                                                                                                                    
1/2 Cup Finely Grated Parmesan Cheese

I loved mashing up this concoction of fresh herbs and spices. So therapeutic, and it smelled insanely good.

Later that night I tried Sara’s Scallops on Creamy Leeks for dinner. And It was serious YUM. I would have taken photos, but I was too busy destroying the kitchen :)

Those almonds look amazing Lisa! I know someone who just tried roasting her own nuts, so I will show her this and see if she wants to try. Or I might try them :)
